Leche de Tigre & Chicha Morada

Literally “tiger’s milk,” this bright and spicy citrus-based marinade is used to cure the fish in classic Peruvian ceviche. Chicha morada is a beverage with an intense violet hue that is part of the culinary traditions of certain regions in Latin America, especially in Andean countries like Peru and Ecuador. Recognized for its distinctive color and sweet-sour flavor, chicha morada is prepared using ingredients such as purple corn and a combination of fruits and spices.

Indio Viejo & Pinolillo

Indio Viejo is a very old dish that dates back to before the time of the first Europeans' arrival in Las Americas, It is a pre-Colombian dish accompanied by a flavorful burst of corn.
Pinolillo is made of toasted and ground corn, with cacao.

Vegan Chick Pea Ceviche con Tostones
Experience includes a live demonstration
The group will experience live interaction with our chef during this event and does not include a meal presentation.
This recipe is filling, nutritious, and flavorful – the perfect plant-based meal to fuel you or help you recover from a strenuous workout.
It’s inspired by traditional Ceviche, but instead of white fish, it includes garbanzo beans (chickpeas), keeping it entirely vegan.
The cucumber adds a bit of crunch and the cilantro and lime juice help all the flavors come together perfectly.
Tostones are are twice-fried plantain slices commonly found in Latin American and Caribbean cuisine.
